Thai Chicken Lettuce Wraps

These healthy Thai chicken lettuce wraps feature tender, flavorful chicken, crunchy cashews, and a zesty Thai-inspired sauce. Served in crisp lettuce leaves, they are a refreshing and satisfying dish perfect for a nutritious and low-carb meal option.

Ingredients:
1 pound ground chicken or minced chicken breast
1 tablespoon olive oil
3 cloves garlic, minced
(optional) 1 red bell pepper, diced
1/4 cup soy sauce
2 tablespoons lime juice
1 tablespoon fish sauce or oyster sauce
1 tablespoon Sriracha sauce (adjust to taste)
1 teaspoon grated fresh ginger
Diced chives or chopped fresh cilantro to garnish
1/4 cup chopped cashews (or peanuts)
1 head butter lettuce, leaves separated

Instructions:
1. Heat the olive oil in a large skillet over medium heat. Add the garlic and sauté for 1 minute.
2. Add the chicken to the skillet and cook until browned, breaking it apart with a spatula as it cooks.
3. Stir in the diced red bell pepper and cook for 2-3 minutes.
4. In a small bowl, whisk together the soy sauce, lime juice, fish sauce, Sriracha sauce, and grated ginger. Pour this sauce over the chicken mixture in the skillet.
5. Cook for an additional 2-3 minutes, stirring to coat the chicken and peppers.
6. Remove the skillet from the heat and stir in the chopped cilantro.
7. Spoon the chicken mixture into the lettuce leaves, top with chopped nuts, and serve.
