Protein Powerhouse Salad

A vibrant and protein-packed salad featuring a bed of crisp, roasted green beans as the base. Drizzled with a tangy Dijon mustard dressing for a zesty kick. This salad is a delicious and nutritious meal that is sure to satisfy your hunger and tastebuds.

Ingredients:
1 can of tuna (drained)
4 hardboiled eggs, sliced
1 can of garbanzo beans (drained and rinsed)
2 cups green beans, trimmed
2 tablespoons sesame seeds
Salt and pepper to taste

Dressing:
2 tablespoons olive oil
1 tablespoon Dijon mustard
1 tablespoon lemon juice
Salt and pepper to taste

Instructions:

1. Preheat the oven to 400°F (200°C). Arrange the green beans on a baking sheet and roast for about 15-20 minutes, or until slightly crispy.
2. In a small bowl, whisk together the ingredients for the Dijon dressing and set aside.
3. In a large serving platter, arrange the roasted green beans as the base.
4. Top the green beans with the drained tuna, sliced hardboiled eggs, garbanzo beans, and sesame seeds.
5. Drizzle the Dijon dressing over the salad and season with salt and pepper to taste.
6. Serve immediately and enjoy!
